Ingredients
- 10 whole carrots
- 1 large lemon (only juice)
- 2 garlic cloves , chopped very fine
- 2 1/2 teaspoons ground cumin
- 1 tsp paprika
- 1/3 cup olive oil
- 1/4 cup fresh Coriander, chopped ( or parsley )
- 1 tsp ground sea salt
Preparation
- Prepare a marinade of the lemon juice, garlic, cumin, paprika, olive oil, and sea salt and put aside
- Steam whole carrots in a steamer until tender ( roughly 10 minutes)
- Slice carrots, put into a glass bowl and pour marinade over the hot carrots
- Add the coriander, refrigerate and allow flavors to mingle for about 4-6 hours
