Moroccan carrot appetizer

Ingredients

  • 10 whole carrots
  • 1 large lemon (only juice)
  • 2 garlic cloves , chopped very fine
  • 2 1/2 teaspoons ground cumin
  • 1 tsp paprika
  • 1/3 cup olive oil
  • 1/4 cup fresh Coriander, chopped ( or parsley )
  • 1 tsp ground sea salt

Preparation

  1. Prepare a marinade of the lemon juice, garlic, cumin, paprika, olive oil, and sea salt and put aside
  2. Steam whole carrots in a steamer until tender ( roughly 10 minutes)
  3. Slice carrots, put into a glass bowl and pour marinade over the hot carrots
  4. Add the coriander, refrigerate and allow flavors to mingle for about 4-6 hours
